Jam and Bread - Part VII

 Part VII - Bread Update

After my jelly making expedition, I wasn't happy with my bread recipe.  Although it was good, it got stale very quickly and wasn't as light and moist as I wanted it to be.  I made a couple of changes for my next batch.   I substituted one cup of water from boiling potatoes for one cup of water in the recipe, then added tap water to get to two cups.  Since I had just boiled the potatoes, I had to wait for the water to cool down to 120 degrees.
 
 
I also used an ounce and a third for each roll rather than ounce portions and the rolls were a better size.  One batch made three dozen dinner rolls.  I also conquered my fears of making rolls in a 9x13" pan and made 18 rolls per pan.

 

The results were perfect.  A day later, the rolls are still moist and don't need to be microwaved.  That is better than the couple of hours it took for them to go stale without the potato water.  The potato water is well worth the effort, and the rolls are great!
